Ingredients
Salad
2 cups green tomatoes, chopped
¼ cup red onion, thinly sliced
¾ cup mozzarella, cubed
½ cup walnuts, chopped

Vinaigrette
2 tbsp *chives, roughly chopped
3 tbsp olive oil
1 ½  tbsp white wine vinegar
¼ tsp salt
¼ tsp pepper
1 garlic clove
1 tsp honey
1 tsp Dijon mustard
Instructions
Chop: 5 minutes
1. Chop and slice the green tomatoes, red onion, and mozzarella, and walnuts. Add to a bowl and mix.

Blend and Mix: 5 minutes
2. Roughly chop the *chives and add to a blender or food processor.
3. Add the oil, vinegar, salt, pepper, garlic, honey, and Dijon to the blender and blend until chives are broken down and the vinaigrette is green.
4. Pour the vinaigrette on the vegetable mixture, stir, and *serve.​​​​​​

* Replace chives with another leafy green herb if desired.

*If serving later, store the vegetable mixture and the vinaigrette in the refrigerator in separate containers. Remove the vinaigrette 15-20 minutes before serving to allow it to soften. Pour the vinaigrette on the vegetable mixture, stir, and serve.
