Ingredients
2 tbsp *olive oil
1 small yellow onion, thinly sliced
1 tsp salt
1 tsp black pepper
½ tsp red pepper flakes
3 cloves garlic, minced
1 cup heavy cream
½ cup water
½ cup pesto
½ cup parmesan, freshly grated
½ lemon, freshly squeezed
1 tsp lemon zest
Instructions
Prep: 10 minutes
1. Prep your ingredients and set aside: mince garlic, slice yellow onion, grate parmesan, zest and squeeze lemon.
Heat and Stir: 15 minutes
2. Heat a sauce pan on medium heat. When hot, add the *oil and onions. Stirring often, sauté the onion so it has caramelized (5-6 minutes).
3. Turn the heat to medium-low. Add the minced garlic, salt, pepper, and red pepper flakes. Cook until fragrant (1 minute).
4. Add the heavy cream, water, and pesto. Bring to a simmer, do not boil (4-5 minutes).
5. Add the parmesan and stir until it has melted in the sauce and turn off the heat.
6. Stir in the fresh lemon juice and zest. Serve over pasta and top with veggies or meat for added flavor.
*Replace one tablespoon of olive oil with chili oil if you like it spicy.
