Ingredients
2 cups chicken, shredded
¼ cup red grapes, chopped
¼ cup celery, chopped
¼ cup red onion, chopped
2 tbsp parsley, chopped
½ cup cottage cheese
¼ cup plain Greek yogurt
2 tsp Dijon mustard
2 tsp lemon juice, freshly squeezed
2 tsp red wine vinegar
½ tsp salt
¼ tsp pepper
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp mustard powder
Instructions
Shred & Chop: 15 minutes
1. Shred the chicken in a bowl.
2. Chop the grapes, celery, red onion, and parsley and add to the chicken.
Mix: 10 minutes
4. Add the cottage cheese, yogurt, mustard, lemon juice, vinegar, and seasonings to the bowl. Mix until combined. (Optional) Refrigerate for 30 minutes to combine flavors and serve.
